Bread Making at Que Upstairs with Chuong

Stories – June 2020

Kaarem's creative director Chuong Pham, makes bread at Que by Kaarem’s café-bar-kitchen, Que Upstairs, a space of experimentation and gathering. Chuong began making bread based on his interest in fermentation and enduring desire to transform raw materials into something that can be enjoyed by and shared with others.

Bread has many iterations worldwide, but inherently all share the same nurturing and comforting properties. Made with just a few common ingredients and a dedication of time - it is a gratifying process.

At Que, the sourdough bread is created in small batches by hand. This approach is also carried over into the way Kaarem’s new aprons are created—in small batches, by hand, using remnant material from our studio in Saigon. The resulting aprons were created to coexist at Que Upstairs to help protect our garments but also to help set our intentions when making bread.
